Our Story

In 2013, husband-and-wife James and Natasha Shepherd set out to revive a lost taste of Welsh heritage. What began as a small kitchen experiment soon became a full-scale bakery in North Wales.

Over time, Shepherd’s grew, reshaped, and embraced new horizons — but the heart of it remains the same: respect for tradition, obsession with quality, and a belief in baking with purpose.

Today, Shepherd’s Biscuits Ltd brings together our family of brands under one roof, producing award-winning biscuits that celebrate flavour, story, and craftsmanship.

The biscuit where it all began: Aberffraw

At the core of our range is the Aberffraw biscuit, sometimes called Teisen Berffro or Cacen Iago. Legend says a Welsh king’s wife was walkin gon the beach at Aberffraw on Anglesey, found a scallop shell on the beach and asked for a biscuit to be baked in its shape.

However, its origin is likely to be to medieval pilgrims on the Camino de Santiago, who wore scallop shells as a symbol of their journey. In Wales, the symbol became entwined with local tradition — making the Aberffraw biscuit a bridge between faith and craft.

Our Aberffraw biscuits have won numerous Great Taste Awards and Great British Food awards, and we continue to bake them by hand, keeping this remarkable Welsh story alive.
